I have a client who previously uploaded the app via TestFly and is now claiming that I did nothing and that the app has problems. Is there a report from Apple that can help me refute his claim?

The client loaded the app in TestFly. So this is just for testing, not for sale.
So what does he accuse you of ? Not having developed yourself ? Not meeting his spec ?
The fact that an app has problem in TestFlight is not uncommon. That's the purpose of TestFlight to check for potential issues. Up to you to correct them now.
AKAIK, there is nothing Apple can or will do in such a case. Up yo you to show the logs of the archiving sessions, or even showing some source code. But that's a question between you and your client.
